Vegetables are processed into cut, cleaned and preserved forms — trimmed and diced pieces, blanched and frozen packs, and dried or pulped material for further use. Produce is received, washed, sorted and graded, peeled and cut, then taken down whichever preservation route the order calls for before packing.
Complete Vegetables Process Flow
Vegetables are tipped in loose, fed forward and washed and rinsed clear of soil and field trash. Surface water is blown off before the produce reaches the sorting line.
Damaged, discoloured and undersized pieces are taken out and the rest is graded to the size the order calls for. Sorting is done optically and by hand pick on the belt.
Skin, roots and stems are removed and the vegetable is chopped, diced or cut into the shape the pack calls for. Cut size is set by the route the material goes down next.
Cut vegetables are blanched to stop enzyme activity, then cooled straight down so they do not carry on cooking.
The prepared vegetable then goes down one of three routes — frozen loose or in blocks, dried down for ambient storage, or crushed for pulp and paste. The route is chosen by the product being sold, not by the vegetable.
Product is weighed out, filled into pouches or sealed trays, checked for foreign body and cased. Frozen and chilled packs are held in cold store until despatch.
