Spaghetti Processing Plant & Machinery Solutions
Spaghetti processing turns durum semolina into long, round solid strands. Dough is extruded through a fine die, and the strands are draped over drying sticks and carried through a long-goods dryer, then trimmed to length, weighed and packed.
Complete Spaghetti Process Flow
Semolina is drawn from silos, elevated, sifted and passed over magnets before dosing.
Semolina and water are dosed and mixed to a uniform dough, since any dry pocket shows up as a weak point in a long strand.
Dough is extruded through a fine round die and the continuous strands are draped over sticks that carry them through the plant. From this point the product is handled hanging rather than lying on a belt.
The hanging strands pass through pre-drying, drying and stabilising zones with controlled air. Drying too fast leaves the strands brittle and they snap during handling.
Dried spaghetti is stripped from the sticks, trimmed to a uniform length and the trimmings are separated out for reuse.
Measured bundles are wrapped, coded, checked and packed into cartons.
