Pepper Processing Plant & Machinery Solutions
Pepper processing converts harvested pepper berries into whole black pepper and ground pepper. Berries stripped from the spike are washed, blanched, dried until the skin darkens and wrinkles, then cleaned, separated by density, steam treated and milled.
Complete Pepper Process Flow
Berries are washed clear of stalk, leaf and field dirt, then dipped in hot water. Blanching loosens the skin and helps the berry blacken evenly during drying instead of drying patchy.
Blanched berries are dried in warm air until the skin shrinks and wrinkles and the moisture is safe for storage. Moisture is checked through the run so batches are neither over-dried nor left prone to mould.
Light pinheads, dust and stalk pieces are aspirated away and stones are taken out on a de-stoner. Gravity separation splits heavy sound berries from light ones, which is how bulk density grades are made.
Whole pepper is steam treated to reduce the microbial load carried in from open field drying. The treated berries are dried back down before they go anywhere near the mill.
Whole pepper is milled to table grind, restaurant grind or fine powder and sifted to the ordered mesh. Closed conveying keeps the volatile aroma in the product rather than in the room.
Whole and ground pepper are filled into bottles, jars or pouches, capped, labelled and coded.
