Mango (Amchur) Processing Plant & Machinery Solutions
Mango processing in the spice trade produces amchur, the sour powder made from unripe green mango. The fruit is washed, peeled, de-stoned and cut into thin slices, the slices are dried until brittle, and the dried slices are milled into a pale, acidic powder.
Complete Mango Process Flow
Raw green mangoes are washed and rinsed to remove latex, dust and spray residue. The skin is removed, since peel left on darkens the finished powder.
The stone is separated from the flesh and the flesh is cut into thin, even slices. Uniform slice thickness is what allows the whole load to dry at the same rate.
Slices are dried in warm air until they are brittle enough to snap and to mill cleanly. Air is dehumidified so the load keeps losing moisture instead of stalling at high humidity.
Dried slices are milled to amchur powder and sifted to a uniform mesh. Oversize and fibrous pieces are returned to the mill rather than passed on.
Amchur draws moisture from the air, so it is filled and sealed promptly in barrier pouches. Filled packs are metal checked and coded before casing.
