Hakka noodles are thin wheat noodles made for stir-frying, sheeted and slit like other noodles but steamed and then portioned into nests before drying. The nest form keeps the strands separate so they do not clump when boiled.
Complete Hakka Pasta Process Flow
Flour is sifted and mixed with water and salts to a uniform dough ready for sheeting.
The dough is formed into a sheet, rolled down through successive passes and slit into thin strands. Hakka noodles are cut narrower than flat noodles, so the slitting rolls are changed to suit.
The strands are steamed to gelatinise the starch and set the noodle before it is portioned.
Steamed strands are folded into nests or cakes of a set portion size, which is how Hakka noodles are sold and cooked. The nest holds the strands loose so they separate cleanly in boiling water.
The nests are dried with hot air until stable, then cooled before wrapping.
Cooled nests are wrapped, coded, weight-checked and packed into cartons.
