Fruit & Vegetable Paste Processing Plant & Machinery Solutions
Fruit and vegetable paste is a thick, cooked concentrate made from produce such as tomato, garlic, ginger or chilli. The washed raw material is crushed, cooked and reduced to remove water, then refined through a mill until it is smooth and dense. The paste is heat treated and filled into pouches, cans or drums.

Raw material is washed and sorted so that rotten, mouldy and unripe units are taken out before crushing. Whatever goes into the kettle sets the colour and taste of the finished paste, so this stage is not skipped.
The produce is broken down into a coarse pulp and the skins and seeds are separated out. Peel and seed left in the pulp show up later as specks and bitterness.
The pulp is cooked in a jacketed vessel with continuous stirring and water is driven off to thicken it. Steam is supplied from the utility side and heat is recovered through the exchanger.
The concentrate is passed through a wet mill so the remaining fibre is broken down and the texture becomes smooth. Shearing at this stage also disperses the solids through the batch.
The paste is heat treated to make it shelf stable, then cooled and held in a closed tank until filling. Holding the hot paste in open vessels darkens it, so transfer is kept closed.
Measured doses are filled into retort pouches, cans, jars or bulk drums depending on whether the buyer is retail or industrial. Containers are closed, labelled and coded on the same line.
