Flat Noodle Processing Plant & Machinery Solutions
Flat noodles are wide, ribbon-shaped noodles slit from a rolled dough sheet rather than cut short at a die face. The dough is mixed and rested, sheeted down to the required thickness, slit into ribbons of even width, dried with controlled air, then cut and packed.
Complete Flat Pasta Process Flow
Sifted flour and water are dosed and mixed, then the dough is held so the gluten relaxes before sheeting. Resting is what allows a wide sheet to be rolled thin without tearing at the edges.
The rested dough is formed into a continuous sheet and reduced in stages to the thickness the finished ribbon requires.
The sheet is slit lengthways into flat ribbons of even width, and the edge trim is returned to the dough system.
The ribbons are dried with controlled air and humidity so the wide flat section dries without curling.
Dried ribbons are cut to pack length, weighed into pouches and inspected before despatch.
