Coconut milk is extracted from the white kernel of mature coconuts, which are de-husked, de-shelled and pared before the kernel is shredded, pressed and the extract filtered, standardised, homogenised and sterilised for canning or aseptic packing.
Complete Coconut Milk Process Flow
Mature coconuts are de-husked and the hard shell is cracked away from the kernel. Coconut water released at this stage is drained and collected separately.
The brown testa is pared off the white kernel and the kernel is washed and rinsed. Removing the skin keeps the extract white and free of dark specks.
The pared kernel is shredded and the milk is pressed out in an expeller or press. The residue can be moistened and pressed a second time to recover a lighter extract.
The extract is strained and passed through a separator to take out fibre and adjust the fat content. Stabilisers and emulsifiers are dosed in so the milk holds together in the pack.
The standardised milk is homogenised and then sterilised so that it can be packed for ambient distribution. Cooling follows immediately through a heat exchanger before filling.
Coconut milk is filled into cans, retort pouches or cartons and seamed or sealed shut. Packs are labelled, cased and palletised for domestic and export despatch.
